Mondays with Monica

I am so so so excited Christmas is almost here, less then two weeks to go. I already have my Christmas meal all planned out. This week I thought I would share my Christmas day menu with you.  First the star of the show...I will be making a traditional ham. You know the kind with pineapple rings, cherries and cloves. YUM! I will also be making Polynesian style pork ribs. Not very Christmasy? But the recipe sounds oh so delicious and I just happen to have a rack of ribs in my freezer. My sides will be candied yams. This is a first for me and I am only making them per request from the husband. The man has a major sweet tooth. I don't even like candied yams but heck, it is the season for giving. I will also be making a baked macaroni and cheese, Rachel Ray's French Cut Green Beans with Almonds and Fried Onions, stuffed mushrooms and rolls. And to finish the meal off, as if all this food isn't enough. I will be making Gingerbread Cupcakes with Cream Cheese Frosting for dessert. Whew! That's a lot of food! What's on your holiday menu? Until next time...
